2 Pepper and Onion Quiche Muffins

Just something I wanted to see the nutrition info for.

SERVES 6 , 6 muffins (change servings and units)

Ingredients

  • 4 large eggs
  • 3/4 cup pasteurized liquid egg-whites
  • 2/3 cup red pepper, chopped
  • 2/3 cup green pepper, chopped
  • 2/3 cup onion, chopped

Directions

  1. 1
    Preheat oven to 375.
  2. 2
    Spray muffin pan with nonstick spray.
  3. 3
    Pour egg whites and eggs into a bowl and mix together.
  4. 4
    Saute onions and peppers in water until tender crisp.
  5. 5
    Add peppers and onions to bowl with eggs and mix.
  6. 6
    Pour mixture into muffin tins and place in oven for about 20 minutes or until a fork inserted into the middle of a quich comes out clean.
