Polish Sausage & Sauerkraut Casserole ("kapusta")

When my husband's grandmother died, I was the designated person to bring this to all holiday dinners (even though I'm Irish!) since I learned what to do by watching her. She always used fresh rather than smoked Polish Sausage.

SERVES 8 (change servings and units)

    Preheat oven to 325 dg. Bring sausage to boil and simmer 15 minutes Drain and set aside.

    Cut bacon into small pieces. Begin browning, then add diced onion. Saute together until bacon is almost crisp. Drain mixture, reserving bacon grease.

    Drain sauerkraut (do not rinse). Add kraut and brown sugar to bacon mixture. Mix in about 2 T bacon grease and water, then place in large casserole dish. Cut Polish sausage into 3" pieces and place on top of sauerkraut.

    Cover and bake at 325 dg. for 1 hour 15 mins., checking sauerkraut mixture halfway through to add more water if sauerkraut appears very dry. Finish baking, then remove from oven. Taste sauerkraut and, if desired, adjust flavor by adding salt and pepper, or a little more brown sugar, vinegar or bacon grease to your taste. (Note: In the old days, Busia (grandma) would soak a cup of yellow peas overnight to soften then would mix them into the sauerkraut. It was probably to stretch the quantity, but I don't do it anymore!).

Really loved this! I did not have fresh polish sausage, so I used packaged. It still tasted great. Otherwise, I followed the recipe exactly (except I halved it). This will go in my make often category! Thanks for posting Mareesme. Sue

    After reading Redheadz45's comments I just had to say that if you would like more of the flavor omit the 1/2 cup brown sugar. I've seen older Polish Women do this because they don't like the bite of sauerkraut!!

    As authentic as those served at Sunday dinners at my grandparents home. I did as poster suggested and added a little more pepper, salt amd vinegar when done to get flavor desired to my taste.

    This is great. I also use pork chops in place of sausage and can be layered in crockpot for 4 hours.
