Curried Sausages

Curried sausages are quite popular comfort food in Australia, this is my recipe that I have made commercially for many years and have had lots of compliments for.

SERVES 4 -6 (change servings and units)

Ingredients

    Cover the sausages with cold water; bring to the boil and simmer about 5 minutes.
  2. 2
    Drain, cool, remove skins and cut each into 4 or 5 pieces.
  3. 3
    Heat the oil in a large saucepan and fry the onion, garlic and ginger, carrots and potatoes, stirring until the onions are soft. Add the curry powder and cook a minute or two.

    Add the tomato paste, chutney, apple sauce, stock and coconut milk. Stir well, then return the sausage chunks to the saucepan.

    Bring too the boil then cover and simmer about 45 minutes. Remove the lid and allow to cook about 15 minutes more to reduce the sauce a bit. If you can’t be bothered, mix two tablespoon cornflour (corn starch) with 2 tablespoons water and stir this through to thicken.

    1 cup of peas can be added in the last 15 minutes as well.

    Season with salt and pepper and serve garnished with copped fresh coriander.

I cook for my mother, and she is difficult to please, and hates curry. I was running late so I sent hubby to mum's with a bowl of this, and expected a small tirade the next day. SHE LOVED IT!!! said it was a 5star all the way and just how she likes her sausages. Now for me, I like a little more curry, but any recipe that mum likes gets 5 stars from me thanks Jan

    Fantastic reciepe. i was unsure at first when in read the ingredients but what a surprise. i have made this both by boiling the sausages as well as frying them first. I like it both ways

    My hubby & I loved this! I was actually looking for a curried chicken recipe, and used this sauce, but with my chicken. It was perfect! I have every intention of trying it again soon, with sausages. Thanks for sharing it!

    I love curry and I thought this was a nice stew. I liked the potatoes, carrots, and peas of a traditional stew combined with the sweet and spicy curry flavors. DH and DS were less enthusiastic - they would have rated it 3 star - they liked it but weren't overly excited. Wish there was a restaurant around here that served a dish like this! Made for Aus/NZ recipe swap.
