This is a comfort dish, and done in the microwave. It makes a good side to roast, steak, or chicken.

SERVES 8 (change servings and units)

Ingredients

Directions

    In 12X8 baking dish, arrange potato halves, cut side up, around edges of dish.
  2. 2
    Add 1 tablespoon water and cook, covered, on high, 8-10 minutes until tender, rotating dish halfway through cooking time; drain.
  3. 3
    Meanwhile, combine all remaining ingredients.
  4. 4
    Place this mixture on cut sides of potatoes and cook on high 1-2 minutes until cheese melts.

This is a lovely, easy and inspiring recipe! I ended up using what I had on hand...white potatoes, pepper salami, and some other yummy add-ins to make a meal! I loved it so much I had to post my version Italian Inspired Potatoes. Thanks Potpie! Made for 1-2-3 hit wonders.

    Loved this easy, tasty way to prepare potatoes. Dinner last night was a purchased rotisserie chicken and I needed something equally fast to prepare for a side dish. Sure am glad I chose these! The only changes I made were to use peeled white skin potatoes, and we ate them at the table instead of on the couch Thanks so much for posting this recipe!
