Try other Cinnamon-Raisin Bread Pudding recipes

Okay...I only had a half of loaf of crappy dry homemade cinnamon bread. I only had INSTANT pudding. I just went ahead and made a half recipe [3 cups skim milk-1 box instant vanilla pudding and a half loaf of crappy cinnamon bread] and put the pile of soaked bread into a greased, glass square 8 X 8 pan instead! Pour the pudding mixture over all of it. I only baked it for 30 minutes and then put into the fridge to "set". Man...heaven!

I love recipes with only few ingredients, this is great. I had to adapt it slightly as the pudding mixes I had in the cupboard were 2 sachet self-saucings & I didn't realise when I tagged this. Instead of pudding mix I used some leftover vanilla cake mix that was in the cupboard. I also added some extra cinnamon & served this as a brekky pudding with some yoghurt. So simple & tasty & I can't wait to try it with the pudding mix next time.

So easy to make and tastes so very good! I added a little extra cinnamon and raisins plus a bit of nutmeg. This is a definite make again recipe, thank you cookiedog!

On the whole I loved this. I made it exactly by the recipe and for the ease of preparation it was quite good. I used diet, sugar free, pudding and that worked just fine. The next time I make this, and there will be a next time, I'll add at least 1 tsp of cinnamon to the pudding powder before adding the milk as well as a few more raisins scattered in. My baking time was only about 40 mins with convection. Super easy, quick and tasty with low fat and sugars. What more could you ask?
