This was very good, but had to cook it a lot longer on high in order for the veggies to be tender. Thank you for sharing!

WOW - this was GOOD!! I made exactly as followed except only used 2 cans of tomats since my family usually isn't a fan of them, and skipped the celery since I'm not a fan. Next time I may add some mushrooms, but otherwise this is AMAZING!!

This recipe is perfect on a cold snowy day! I used ground round, 4 cups of water, 1 can of beef broth, and 2 beef bouillon cubes. DH picked up quick cooking barley instead of pearl barley so I added it towards the end. Also, I had another recipe in the crockpot so I did make this in my dutch oven on the stove. Cooked on medium low for a couple hours and it was amazing! Great flavors and loved the barley, even better warmed up for lunch this afternoon. Thank you megsmom!

Soup is a true comfort food and for this reason it is nice making it in the crock pot for its ease and blending of flavors. Cooking on Low on all day provides a chance for the flavors to blend together. This soup is FANTASTIC! I cooked it in my Rival 6 quart Smart Pot and it was filled to the rim. The only change I made was to add the pearl barley at the end of the cooking time because it does swell up and absorb all the broth. I added it the last hour of cooking. Serve this with homemade bread and a side salad and you have a complete meal.
