Sparkling Raspberry Lemonade

Delicious homemade lemonade! Nothing more refreshing! Recipe came from the August, 1999 issue of Bon Appetit Magazine

SERVES 6 (change servings and units)

Ingredients

Directions

    Combine frozen raspberries, sugar and 1/2 cup water in medium saucepan.
  2. 2
    Stir over medium heat until sugar dissolves and berries thaw.
  3. 3
    Increase heat and boil 3 minutes.
  4. 4
    Strain raspberry mixture into bowl, pressing on solids to extract as much liquid as possible; discard solids in stainer.

    Mix lemon peel into raspberry syrup in bowl.
  6. 6
    Chill until cold.
  7. 7
    Stir raspberry syrup, lemon juice, and sparkling water in large pitcher to blend.

    Fill 6 glasses with ice cubes.
  9. 9
    Pour raspberry lemonade into glasses.
  10. 10
    Add fresh raspberries to each glass, if desired.
  11. 11
    Garnish with lemon slices and serve.

    VERY TART and VERY REFRESHING! I mixed the chilled syrup with the lemon juice and then used it in individual glasses as I felt like some. I used 6 packets of splenda to a tall glass to give it some sweetness. Next time I may try boiling the lemon zest with the raspberries next time and straining it.

    This is the most refreshing drink I have had on a hot summer day! When you add the ingredients in the correct amounts (I had to make it several times and try more of this and less of that) it is superb! An absolutel MUST when you are having company in the summer.
