Paula Deen's Chicken Quesadilla Stuffed Jalapenos

This is from Paula Deen's magazine. Great appetizers. The jalapeños can be stuffed up to 2 days ahead, covered and refrigerated.

SERVES 40 (change servings and units)

Ingredients

Directions

    Preheat oven to 400 degrees.

    Lightly grease baking sheets.
  3. 3
    Cut jalapeños in half lengthwise.
  4. 4
    Remove and discard seeds and membranes; Set aside.
  5. 5
    In a medium bowl, combine chicken and remaining ingredients.
  6. 6
    Spoon mixture evenly into jalapeños.
  7. 7
    Place on baking sheets.
  8. 8
    Bake 20 minutes.

These were very tasty. Next time I plan to use a little less cumin. It's surprising that they are not hot. Nice appetizer that is quick, easy to prepare and looks great. Thanks Mary for posting.

    Oh these are good! I used turkey in place of chicken as I had lots stored in my freezer, I also added in a teaspoon of fresh garlic and reduced the cinnamon to 1/4 cup, since my family loves extreme heat I left in some of the seeds, Rotel is not sold in Canada so I use a ripe red tomato finely chopped and also used seasoned salt, thanks for sharing Mary!
