This is a family favorite and so simple. I first got the recipe from a friend who was a chef in a Japanese restaurant. When I married my husband he was using the same recipe he got from his Japanese ex-mother-in-law. It is so versatile we have used it for chicken breasts, wings, thighs, salmon, halibut, beef-kabobs - even veggies!

SERVES 4 -6 (change servings and units)

Ingredients

Directions

  1. 1
Heat oil in a large saucepan over medium high heat.
  2. 2
Brown chicken pieces in hot oil.
  3. 3
While chicken is browning, mix together the soy sauce, sugar, water, and ginger.
  4. 4
Add the sauce to the chicken.
  5. 5
Bring to a boil and then reduce heat to medium low and let simmer, uncovered, for about 20 to 30 minutes or until chicken is done and sauce has thickened.
  6. 6
Turn chicken pieces occasionally during cooking process.
  7. 7
Serve over cooked rice.(We use short grain "sticky rice" prepared in a rice cooker.).
  8. 8
Serve excess sauce along side, people always seem to want more of it.
  9. 9
To reduce the calories, skinless chicken may be used.

Super yummy...daughter said it was "seriously amazing"! I wasn't sure if daughter would like the sauce, so I cooked the sauce in a separate saucepan, and thickened a bit with cornstarch. Served the chicken over white rice, and spooned the sauce over top. Very good...will be a regular dinner here. Thanks!

UPDATE: DO NOT try to make this recipe in a crock pot! I always try to modify things to fit my lifestyle...recently began an accelerated business program & need more "cook on their own recipes". This is WONDERFUL made as directed but please do not waste your chicken or time throwing this into a crock pot...it was disgusting, absolutely not-edible. Please follow recipe and enjoy this yummy dish! END:: Made this for a party we had on Saturday night & everyone was raving about it. DH said if he could give it 6 stars he would! I used 8 drumsticks and followed recipe exactly except that I used 2/3 cup soy and 1/3 cup teriyaki. And I did add some cornstarch at the end because the sauce was not thickening at all. The flavor of both the chicken and the sauce was amazing. Scrumptious scrumptious! Also made jasmine rice in my rice cooker, pad thai, charmie's oriental coleslaw, & jalapeno poppers. What a delicious party! I will make this many times and will try it with chicken strips next time. Thanks so much for a great recipe that everyone enjoyed!

This is the same recipe I have used for years. It works great with OAMC in the freezer with any type of raw meat. The chicken gets marinated and I use a bit of cornstarch to thicken the sauce up before cooking.

A very similar recipe was given to me by a lady from Hawaii and she said this is a poular dish there served with rice and macaroni salad. I love it. So simple and yummy. I don't make the macaroni salad but I make Lizann's Oriental Cabbage Salad. I made this recipe with 6 leg quarters and I included Ginger Powder. It was excellent and had plenty of sauce which we will use the left over tomorrow night to dip potstickers in. Thanks for sharing!
