Bruschetta Chicken Bake - Weight Watchers

DH and I both loved this. Makes 4 servings at 5.5 WW Points each. Serve with salad or green beans for a complete meal.

SERVES 4 (change servings and units)

Ingredients

Directions

    Preheat oven to 400.
  2. 2
    Saute chicken with spices, onion and garlic until lightly browned, but not cooked through.
  3. 3
    Place chicken in a casserole dish and sprinkle with cheese.
  4. 4
    In a bowl, mix tomatoes and stuffing mix, until stuffing mix is moistened.

    Spread stuffing and tomato mixture over chicken and cheese.
  6. 6
    Bake for 30 minutes.

I have made this a few times, it's from kraft food and family magazine. The first time I made it it definetly needed more flavor. Now I use Italian diced tomatoes and add some garlic powder and salt and pepper. Overall I would say its a 3 1/2. I'm not sure but I think the original recipe on the Kraft website doesn't brown the chicken first, you just use the raw chicken and it cooks while baking. I have made it both ways and I prefer the precooking the chicken and my husband prefers it when it the kraft way.

    This was good. After reading the review from greeneggs (but not having Italian diced tomatoes), I added salt and garlic powder and also baked it instead of sauteeing the chicken and spices first (I was feeling lazy). When I mixed the tomatoes and stuffing mix, I also added some Parmesan cheese to give it a little more flavor. If I make it in the future, I will use a smaller can of tomatoes because I think they made the stuffing mix bland. Either that or I will use more stuffing mix or more cheese, thus making the recipe NOT weight watchers. Oh well.

    This was great! I love the flavor. The tomatoes made the stuffing a touch too soggy for me, but it was still great. I will be making this again
