I made two changes to this recipes. One was to use 2 red capsicum instead if one red and one green. And only because I love the flavour of red ones! The other was to add some oregano along with the tumeric. Thanks for posting Chef floWer. Certainly a recipe I will be making agian. Made and reviewed for ZWT4!

Reviewed during ZWT4 A very tasty one pan dinner. Perfect for a lazy and cold Sunday night's dinner. I didn't have any green capsicum so added extra red. We added the beans and artichoke hearts. I forgot to add any salt and we served with freshly cracked black pepper over the top. I think for anyone liking spicier meals then add in some chilis to taste. Photo also to be posted. We had this for dinner tonight & it was lovely. It could use a little more flavour, so next time I'll add some chilli. This was easy to make. I included the bay leaves & beans. Thanks Chef floWer for sharing this recipe.

This is a wonderful recipe! I have a recipe for Arroz Con Pollo, and it is good but the predominate flavor is spanish olives. This was more mexican in it's flavor and seasonings. I did use a large tin of diced tomatoes and a 4 oz. tin (about 1/2 cup)of chopped green chillies. I skipped the red capsicum and decided on buying a bottle of Goya's Sasalita smoked Ancho chilli sauce,since I love smoked hot peppers. Used about 6 TBLS. Skipped the artichoke hearts and included 1 cup of pinto beans.Omitted salt and it suited us. Will definetly keep this one to use another day. Thanks for a good recipe.
