Spaghetti Puttanesca

A friend of mine served this at a dinner party. Everyone loved it and went home with the recipe. From Weight Watcher's magazine.

SERVES 4 (change servings and units)

Ingredients

    In small bow, soak raisins in 1/3 cup warm water.
  2. 2
    Heat oil in large skillet over low heat.
  3. 3
    Add onion and garlic; cook 7 to 10 minutes, until soft.
  4. 4
    Meanwhile, in large pot of boiling water, cook spaghetti 7 to 9 minutes, until tender, drain and keep warm.

    To skillet, add raisins and their soaking liquid, tomatoes, tomato sauce, olives and ground red pepper.

    Raise heat to high and cook for 3 to 5 minutes, until slightly thickened.

    Break tuna into chunks; stir into tomato mixture and cook just until heated through.

    Season to taste with pepper.

This was definitely a fast and easy recipe utilizing things generally on hand. Although it was good, and we ate it, along with crusty sourdough bread, I don't think we would make it again. I think it definitely has to do with what flavors appeal to one's palate. This one just didn't pull ours enough to make it again. Thanks for a fast and easy supper!

    Easy recipe. Made it for dinner on Ash Wednesday. Didn't have the golden raisins but, regular raisins worked just as well.
