Peanut Butter Cookies

These used to be DH's favorite, then he discovered Oatmeal Raisin, now I think these are his 2nd favorite.

Ingredients

  • 1 1/4 cups flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup shortening
  • 1/2 cup peanut butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • 1 egg
  • Directions

      Sift flour add baking soda and powder and salt; sift again.

      Cream shortening and peanut butter.
    3. 3
      Gradually add the sugar and cream thoroughly.
    4. 4
      Add the well beaten egg.
    5. 5
      Combine the dry ingredients and creamed mixture.

      Chill.

      Form into 1-inch balls and place on lightly greased and floured sheet.

      Flatten with fork, making a criss-cross design.

      Bake at 375° 8-10 minutes.

    I like this recipe as it's so quick but to make the cookies a bit more luxurious I added about half a packet of Tollhouse peanut butter and chocolate chips.

    Very good peanutbutter cookies!! DH's favourite. I noticed the ingredients did not list baking powder but it is mentioned in the instructions, so I added 1/4 teaspoon, also there was no time given for chilling the dough, I chilled for 15 minutes, it certainly made it easier to handle. Regardless they are lovely cookies and I will make them again. I happened to have some unsalted peanuts on hand so for half the batch I placed a peanut in the middle. The cook time was perfect, turned out lovely golden brown. Thanks for sharing a good one.
