Scallop Casserole

A simple recipe, yet good enough for company! An adaptation of a prize winning recipe submitted by Joan Ivey from Nova Scotia, Saltscapes magazine.

SERVES 3 -4 (change servings and units)

Ingredients

    Bring medium-size saucepan of water to a boil, add scallops.
  2. 2
    Reduce heat to low and simmer gently for no more than 3 to 5 minutes, depends on the size of the scallops.

    Drain immediately and place scallops into a medium-size buttered casserole; set aside.
  4. 4
    In the saucepan, melt butter.
  5. 5
    Add onion, celery and mushrooms; saute until onions are translucent and most of moisture has evaporated.

    Combine soup and milk and add to the vegetables.
  7. 7
    Pour soup mixture over scallops in the casserole; season with pepper, stir gently.
  8. 8
    Spread fresh breadcrumbs over top and sprinkle with cheese.

    Bake uncovered at 350 degrees for 20-25 minutes, until bubbly and lightly browned.

Magnificient!The flavor is out of this world! I also added 1/2 cup diced green pepper and buttered the fresh bread crumbs so they would crisp a little. I used two giant scallops and cut in small pieces after cooking in water. Do not overcook, Scallops have a tendency to be tough if overcooked in water.There are many possibilities to add to this recipe, it is good standing alone, but you could add cooked rice and a little more milk if you wanted to stretch the recipe.Anyone on a low protein diet will love this recipe as well as fish lovers. Count me as a fan! Thanks for posting!

    Outstanding.My dad and i would always go to a small restaurant back home and he would get a scallop dish like this every time.I made it and it tastes just like it.Wonderful.thank you
