Mexican Black Beans

Good side dish to a Mexican entree.

SERVES 6 (change servings and units)

Ingredients

Directions

    Heat oil in heavy large saucepan over medium-high heat.
  2. 2
    Add garlic, chili and cumin and sauté 30 seconds.
  3. 3
    Add beans and broth and cook 5 minutes, stirring occasionally. Coarsely mash beans with potato masher.
  4. 4
    Continue boiling until thick, stirring frequently, about 20 minutes. Season to taste with lime juice, salt and pepper. Transfer to bowl. Sprinkle with cilantro and serve.

    I add the monterey jack cheese on top and microwave for 2 minutes to melt the cheese.

WOW! Love this recipe. Didn't use cilantro nor cheese and it wa still great!!!! I served it with pica do gallo recipe 16101 and Beer Fajitas recipe 179877. Great, easy and inexpensive

    VERY VERY VERY good! Thank you for this wonderful recipe. I skip the cilantro and cheese(personal preference) and it is still excellent. For two days now all I had for lunch was the leftover beans and a big salad..YUM YUM. : p

    This was so good, I've made it twice in the past week, once as a side dish and the next as a topping for nachos. I too added a little bit of onion along with the garlic because I had some extra on hand. Just one note, in step 4, boil on a low heat to prevent burning as the mixture likes to stick to bottom of the pan.

    Very good. I halved the recipe and left off the cheese. I thought this was a great side to Chicken Burritos.
