Soft and Chewy Pineapple Cookies

Even if you don't care for pineapple, this soft and chewy cookie is fantastic! Mom's recipe (and her favorite, as well). Have to laugh, every time I make them, she CANNOT walk past them without taking one. You can add chopped nuts, too if you are a nut fan

Ingredients

  • cup light brown sugar
  • cup granulated sugar
  • cup shortening
  • 2 egg
  • 1 (20 ounce) can crushed pineapple, drained
  • 1 1/2 teaspoons vanilla
  • cups flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • Directions

    1. 1
      Stir vanilla into pineapple; set aside.
    2. 2
      Cream shortening, sugars and eggs.
    3. 3
      Add pineapple and stir until well blended.
    4. 4
      In separate bowl, combine flour, salt, baking soda, and baking powder; mix well.

      Stir flour mixture gradually into pineapple mixture until thoroughly combined.

      Drop by spoonfuls onto ungreased cookie sheets.

      Bake at 350 degrees for 12-15 minutes.

    yummy and easy to make. I added walnuts and additional pineapple. The cookies are chewy and light which I absolutely love! Next time I will also cut recipe in half.

    These are so yummy! They're always a big hit when I make them and are one of the cookies we make sure to make at Christmas time. Sometimes when we make them, we'll sprinkle a little sugar on top.

    Manda, your Moms favorite cookie is now my favorite cookie. I adore pineapple. I made these for a neighbor, then had to do it again for us! I took the advice of the previous reviewer and put wax paper between layers of cookies.I baked mine for 12 minutes. So easy to make, and SO good to eat!

    My DH and DD are the pineapple fans, not myself. I did think this was a good cookie, though, but different from what I expected from some of the reviews. I was expecting a not too sweet, mildly flavored base, so the first thing I did was make up a batch of cream cheese frosting to have ready for them before I even made the cookies. I needn’t have bothered. My cookies turned out full of pineapple flavor and brown sugar sweetness. Kind of like pineapple upside down cake cookies. We used the frosting on other items, as these were fine by themselves. My cookies were also slightly chewy, not cakey. (I used half regular shortening and half butter flavored shortening, and baked them for the specified time on chilled, parchment-lined cookie sheets.) I’m looking forward to trying different things with this recipe, such as nuts and coconuts, as another reviewer suggested, or maybe even throwing in some white chocolate chips. Thanks bunches!
