Slow Cooker Thai Chicken

I found this recipe on a Betty Crocker site. The original recipe uses chicken thighs, but this version uses boneless, skinless breasts.

Ingredients

  • 1-1 1/2 lb boneless chicken breast
  • 3/4 cup salsa
  • tablespoons lime juice
  • tablespoon soy sauce
  • teaspoon grated gingerroot
  • 1/4 cup chopped peanuts
  • 1/2 cup peanut butter
  • tablespoons fresh cilantro
  • Directions

    1. 1
      Place chicken in crockpot.
    2. 2
      Mix other ingredients except cilantro.
    3. 3
      Pour over chicken.
    4. 4
      Cook for 4 hours on low.
    5. 5
      Sprinkle cooked chicken with cilantro. This is great served with rice!

    This was so tasty! The 'peanutty' taste was so much better than I expected, since I didn't know what to expect with the peanut butter AND peanuts. As with another comment, checked half way through and I wasn't convinced... but by the end of the 4 hours it was lovely and creamy!! I served it with some homemade rustic flatbread and homous. Probably could do with adding some veg, maybe I'll try it with green beans or something next time.

    Claire, this was really good! I printed the recipe out to take on my camping trip, along with my crockpot. It was so easy to tool down the road with dinner cooking!! I make it like you said with nothing extra added or subtracted, and the family loved it! Thanks for posting. I will be keeping this recipe in my T&T cookbook.

    If I hadn't read through ALL of the reviews, I may have skipped trying this AWESOME and VERY EASY recipe! All the positives should be listed first because this was fantastic and a new family favorite! Even my 3 and 5 year olds inhaled it! Thanks Claire! YUMMMY!!!!
