Orange Teriyaki Chicken

Slow cooked chicken cubes in a delicious orange, teriyaki sauce

Ingredients

  • lb boneless skinless chicken breast half
  • 1 (16 ounce) package loose-pack frozen broccoli
  • tablespoons quick-cooking tapioca
  • SAUCE

    Directions

    1. 1
      Cut chicken into 1 inch pieces.
    2. 2
      Place vegetables in crockpot.
    3. 3
      Sprinkle tapioca over vegetables then add chicken.
    4. 4
      Combine all other ingredients and pour over chicken.
    5. 5
      Cover and cook on low for 4 hours.

    This dish was kind of bland and dry for me. Though the chicken was moist (which was surprising since not really covered with liquid), I felt that it needed some more seasoning. Sorry.

    Very tasty, very orangey! We enjoyed this. I ommited the tapioca as I don't have any and used a vegetable mix containing green beans, carrots and broccoli. Great flavour in this simple dish.

    I did this on the stove top because I got started late and didn't have time to cook it in the crockpot. I browned my chicken chunks in a tablespoon of butter first, and then added the sauce ingredients and simmered for about half an hour. Then I added the broccoli (I used fresh florets) and some red and green sweet pepper chunks and cooked another 5 minutes. Served over steamed white rice. It was very tasty and had quite a zippy flavor (possibly from the dry mustard). Thanks Claire!
