Creamy, delicious seafood dish. Goes well with rice or noodles.

SERVES 4 (change servings and units)

Ingredients

Directions

    Brown scallops in 3 Tbsp of the butter.
  2. 2
    Cook 2 minutes.
  3. 3
    Remove.
  4. 4
    To skillet, add shallots, mushrooms, tomatoes.
  5. 5
    Cook 2 minutes.
  6. 6
    Add wine- cook till reduced by 1/2.
  7. 7
    Add cream and salt and pepper.
  8. 8
    Cook 3 minutes.
  9. 9
    Return scallops and add the 1 Tbsp butter.
  10. 10
    Heat through.

The creamy sauce needed more body to it. Next time I will add 2 cloves of garlic when I add the shallots. But over all my family liked it.It was easy to make and a nice change. I do like the tender sea scallops better than the bay scallops.

    Very nice flavor. I will make this again. Next time I'll skip the cream since the canned tomatoes and wine made a nice broth on their own. I used bay scallops, but will try sea scallops next time. Either would be good. Thanks for a really tasty recipe!
