Blueberry and Banana Pancakes

Tasty pancakes. Kids love em.

SERVES 6 (change servings and units)

Ingredients

Directions

  1. 1
    Mix flour, sugar, baking powder and salt in a large bowl.
  2. 2
    Add eggs, milk, melted butter, mashed bananas, cinnamon and vanilla. Stir until well blended and smooth.
  3. 3
    Gently fold in the blueberries.
  4. 4
    Spoon 1/8-1/4 cup of batter for each pancake on preheated, greased griddle or skillet.
  5. 5
    Once bubbling throughout on surface, turn over and cook until done.

These are so so good. I wouldn't change a thing about this recipe. As stated in the past reviews, you won't need a bunch to get your fill. DH had 3, and he's a big eater. I love the slight taste of the banana that comes thru. I've made blueberry pancakes b/f but never with banana. So very glad I did too as they are a winner/keeper. Made for MarketTag~

    These were very good and very filling. We had company so thought we should double the batch for 3 of us not thinking one or 2 pancakes would be enough. Boy were we wrong i could hardly eat more than one and hubby only made it through 2 of them.

    These were nice, little miss DD thought it was great having purple pancakes. We used frozen blueberries & self-raising flour, no baking powder or salt and I used a bit of Splenda in place of sugar and used rice bran oil in place of butter. Very nice & tasty brekky. Made for ZWT 4.

    Like evelyn/athens, I had an over ripe banana that needed to be used. While these have a nice flavor, I did have problems with them sticking and burning. I think that may be due to the 1/4 cup of sugar in the batter. If I were to make these again I would decrease the amount of sugar to 2 tablespoons. I did toss in about 1/4 cup of chopped pecans. Made for ZWT 4
