A nice change to a dinner staple.

SERVES 6 (change servings and units)

Ingredients

Directions

    Recipe can be halved.
  2. 2
    Combine ingredients in large saucepan.
  3. 3
    Bring to a boil; reduce heat and simmer about 10 minutes or until potatoes are tender.

    Drain, reserving broth.
  5. 5
    Add garlic powder, if you want, and then mash potatoes with as much broth as you like until you attain desired consistency.

I found I had left over broth. I prefer a little drier mashed potato. I will try 1 can of broth next time.

    Yum! I made it as directed and ended up adding back about half the broth with about a half teaspoon of garlic powder. It was very flavorful, but being the butter addict that I am, I did add some at the table, as well as black pepper. I can't imagine going back to cooking potatoes in plain old water after discovering this recipe!

    This is a fabulous recipe. Instead of garlic salt, I saute minced garlic in some butter, add 1/2 cup low-fat milk and 1/4 cup of low-fat sour cream. MMMM....good

    These taste WONDERFUL! I followed Stuckinarut's advice and only used 1 can of broth WITH garlic added so I didn't add any extra. I drained too much out and had to add butter which was very yummy. I also added pepper. I can't wait to share this recipe with my friends! Thanks so much for posting!
