Teriyaki Asparagus

Asparagus w/ almonds....yum! You can serve this warm or cold. I prefer warm. For extra flavor, lightly toast the almonds. If asparagus is out of season, you could use frozen.

SERVES 4 (change servings and units)

    Steam/cook asparagus until tender-crisp.

    Meanwhile, stir together almonds, olive oil, cider vinegar, teriyaki sauce, sugar, ginger, and pepper.

    Pour over the cooked asparagus and toss to coat well.

    Serve right away or chill for 1-2 hours and serve cold.

We served this tonight as a side to a teriyaki skewered salmon recipe. I put the asparagus, drizzled with a little olive oil, under a broiler, which turned out nice. I found the dish to be tasty, however, I agree with WI Cheesehead that the vinegar flavor was a little too strong for DH and myself. This dish was quick and easy to prepare. Thanks!

    I made this for Green, Eggs, and Ham game. I steamed the asparagus in my bamboo steamer and used Stir Fry Sauce for the teriyaki sauce. I felt the vinegar flavor was a little strong for me, but otherwise, was pretty tasty!

    Asparagus was very expensive at my food store this week so I used fresh string beans instead and followed your recipe to a T. They came out delicious and I got rave reviews. Will definitely make again with either the string beans or asparagus when it goes on sale.

    I also toasted the almonds before making the sauce. The asparagus cooled down to room temperature before we finished the meal and it tasted good - I am taking the chilled leftovers to have for lunch tomorrow. My husband, who doesn't care for vegetables in general, took a second helping so it must be good!
