Tom's Salsa Ranch Chicken Sandwich

Tom made this up one day (one of those day before grocery shopping days!). It has been come a staple lunch meal in this household ever since. It's great because you can buy a bag of those precooked boneless chicken breasts and toss a lunch together. Note that these ingredient amounts ARE correct, the sandwich ends up being very messy, you can cut back if you want, but there's just something an ooey gooey chicken sandwich that makes this girl's heart sing

SERVES 1 , 1 sandwich (change servings and units)

Ingredients

Directions

  1. 1
    Butter 1 side each of 2 slices of bread.
  2. 2
    Spray frying pan or griddle with non-stick cooking spray.
  3. 3
    Brown non-buttered side of bread.
  4. 4
    Flip bread and brown buttered side.
  5. 5
    Put 1/4 cup of Cheddar onto each slice of bread while browning buttered side.

    Remove from heat and place bread on plate.
  7. 7
    Put 1/4 cup of Salad Ranch Dressing onto bread.
  8. 8
    Place chicken on dressing.
  9. 9
    Add other condiments and vegetables as desired.
  10. 10
    VARIATION: Try different types of bread or cheese. Also great with bacon bits added to the cheese.

Awesome sandwich! My family really loved these. They turned out so moist and flavorful and couldn't be easier. I used thin chicken breasts. Delish!

    Great sandwich! Followed this exactly except I used thin scallopini chicken breast slices, and quickly saute'd them in a non-stick skillet. The skillet already warm, so I just put the buttered sides of bread down, added chicken & the salsa / ranch dressing, tomato, and cheese to the top. I also included some thinly sliced sweet Walla onion, and flipped over and warmed and browned the other side. Scrumptious! I used my own salsa, and made this Light Buttermilk Ranch Dressing dressing. Talk about delicious! Thanks so much for a wonderful lunch!

    My whole family went nuts over these burgers, thanks, Tom! Candy, it WAS kind of messy, but when it tastes this good we didn't even care! The chicken breasts I had were huge, so I sliced them horizontally...we can have these sammies again tomorrow, YAY! Hubby grilled them on the BBQ, I mixed ranch dressing with picante sauce...Sssshhhhh, don't tell picky daughter I subbed some of the dressing with "Lite Ranch", and this sauce is to die for. I made this for ZWT3, but we will enjoy this often! Thanks Tom and Candy!

    We loved this! I grilled two big boneless chicken breasts on the Foreman grill for DH and I. I didn't have any bottled salsa ranch dressing, so I improvised and made my own — I whipped up a batch of fresh Hidden Valley Buttermilk Ranch and a small batch of Hope's Fresh Salsa #132586, then I mixed up my own salsa ranch dressing (which was delicious, by the way). I had intended to add bacon (another reviewer mentioned it, and it sounded good), but I cooked the bacon and left it in the microwave to stay warm. Unfortunately, I didn't notice that I had forgotten it until DH and I were finished eating. Oh well, maybe next time! I topped these with chopped romaine lettuce, sliced dill pickles and sliced tomato (along with the lovely dressing, of course!). There's no denying that these are messy to eat, but they are sooo good! I nearly died laughing when I walked into the TV room where DH was eating and saw him fighting to keep his sandwich together and off of his shirt lol! Thanks for posting, this will be a definite repeater in my house!
