This lovely recipe, from Cooking Light, is great served with a fruit salad. Good for breakfast or dinner!

SERVES 4 (change servings and units)

    Preheat oven to 450*F.
  2. 2
    Lightly coat both sides of the tortillas with cooking spray, and place on baking sheet. Bake at 450*F. for 5 minutes on each side, or until tortillas are crisp.

    Meanwhile, combine the picante sauce, ketchup, and pinto beans in a large nonstick skillet. Bring to a simmer over medium high heat, stirring frequently.

    Make small wells in the bean mixture with a wooden spoon 2" apart.
  5. 5
    Break a an egg into each well, and sprinkle evenly with salt.
  6. 6
    Cover and cook 5 minutes or until egg is desired doneness.

    Place one tortilla on each of 4 plates, and top each serving with 1/2 cup bean mixture and 1 egg.

    Sprinkle each serving with 1 tbls. cheddar cheese, if using, 1 tbls. chopped cilantro and a dash of hot sauce, if desired. Enjoy!

Made this up for dinner and was suprised at how good it was!! Used diced tomatoes with green chili peppers since that's what was in the pantry and it was perfect. I'm sure I'll be whipping this up on a regular basis.

    This was a great, quick and easy dinner for us! They were ready in no time. I used salsa instead of picante sauce, and I left out the cilantro since I didn't have any, but next time I will make sure I have some on hand! Thanks!

    Definately a 5 *, DH loved it! and me too, I added the hot sauce to the beans, made for a nice bite. Definately will make these again. I did have to guess at the amount of ketchup, it's in the instructions and not in the ingredients list. Just put a little squirt so as not to disturb the heat. I will be making these again, thanks for posting.

    This was a great recipe! quick, easy, simple, cheap, tasty... what more could I ask for. I just whipped it up for dinner and we all liked it! I did use a larger can of beans and just added a little more salsa, and got an extra egg in there. Wish I had the cilantro.. maybe next time. thanks for posting!
