Banana Pudding Cake

Instead of making banana bread to use up those ripe bananas, why not try this instead?
SERVES 12
Ingredients
- 1 (18 1/4 ounce) box yellow cake mix
- 1 (3 1/2 ounce) package instant Vegetarian banana pudding mix (use butterscotch if you can't find banana, the flavour will be a little different though)
- 1/2 cup mashed ripe banana
- 4 eggs
- 1 cup water
- 1/4 cup vegetable oil
Directions

Preheat oven to 350F; grease a bundt pan and set aside.2
In a large bowl, combine all ingredients and beat with your electric mixer for 3 minutes.3
Pour into prepared pan and bake for 50-55 minutes, or until a tester comes out clean.4
Cool for 15 minutes before removing from pan.5
If desired, combine 1 cup of sifted icing sugar with a little milk and drizzle this over the cake.

This is a tasty cake. I is much better with some walnuts thrown in and if kept in the fridge. I used a homemade cream cheese frosting. I would make again.

YUMMY!! This cake was just delicious. I used, yellow Duncan Hines cake mix, banana cream instant pudding and one cup of bananas. I baked it in two 9" cake pans for 35 minutes. It turned out perfect. It's very moist and the banana flavor comes thru nicely, but not overpowering. I frosted it with cream cheese frosing. Thanks for posting

Threw this together this evening for my daughters Bday. She wanted a Banana Cake and I could not find the recipe I usually use. This was moist and very good. I did not add the pudding- did not have any and did not have time to run to town- also used applesauce instead of oil. Wish my bananas were riper (sweeter). Topped with cream cheese drizzle. Will make again for sure. Thanks for posting.
