Kicked up Baked Sweet Potatoes

They serve these at a local restaurant here in TX. This is NOT a casserole! These guys are dressed for dinner in their best jackets! The WHOLE potato, baked and split like a white baked potato. You just gotta try these to believe how simple and delish they really are! Enjoy!

SERVES 4 (change servings and units)

Ingredients

Directions

    Wash sweet potatoes and prick with a fork.
  2. 2
    Microwave potatoes for about 5-7 minutes or until soft OR bake in a 350 degree oven for about 1 hour or until soft.

    Mix spices together and set aside.
  4. 4
    Make a slit in the potato just as you would for a regular baked potato.
  5. 5
    Insert 1 tsp butter into each and sprinkle with the spice mix.
  6. 6
    Fluff meat of sweet potato to mix in butter and spices.
  7. 7
    Feel free to adjust the amount of spices and butter to your liking.

    What a delightful way to prepare sweet potatoes. I prepared this dish as written using Purple Sweeties which I baked in the oven. I find that sweet potatoes are sweet enough and don't need any additional sugar. This spice mix made the flavour much more interesting. Thanks for posting. Made for ZWT4

    Love this blend of seasoning on the sweet potatoes! I found though, that gosh darn, I love a sweet, sweet potatoe- so I ended up adding 1/3 cup of brown sugar to the seasoning mix. I'm telling ya, it's soooo great!!

    I had never heard of doing a sweet potato any way other than frying, baking (adding brown sugar and butter, only) or stewing, or the casserole, but this is an excellent change, will definitely do it again.
