Savory Onion, Potato and Blue Cheese Frittata

To save time, I have made this recipe using sauteed diced hash browns in place of potatoes. This frittata is really good!

SERVES 4 (change servings and units)

Ingredients

    Heat the oil with butter in a large frypan over medium-low heat.
  2. 2
    Add in the onion slices; saute for about 10-15 minutes or until lightly browned and caramalized, then season with salt and pepper (leave in the skillet).

    Sprinkle the cooked potato cubes over the onions and sprinkle with black pepper.
  4. 4
    In a bowl whisk the eggs and whipping cream together with salt and pepper; pour over the onions and potatoes.
  5. 5
    Sprinkle with blue cheese and thyme leaves.
  6. 6
    Cook covered for about 6 minutes or until almost set.
  7. 7
    Place under the broiler for about 1 minute.

    Delicious!

Kitten, you have done it again. This is a delicious frittata. I had a left over baked potato that I peeled and cubed for this dish. Also, when getting out the cheese, I discovered that I did not have blue cheese so I used feta. I think this would be delicious with some fresh dill as a change of pace.

    This was so good & I'm so happy to be the 1st to review it. I admit I was intimidated since I'd never made a frittata before, but the directions were twissis-proof & I think the "bare bones" of the recipe can be used to make many variations. My hubby loved it too & that's always my guage for a keeper. Thx!
