This is now my old stand by PB cookie recipe. All the kids & grown ups, too, seem to love it. I've given it out to several moms & even posted it on my blog! couldn't be easier & not at all dry like many PB recipes. Thanks a bunch!!!

My sister made these for father's day, and they were AWESOME! Most gluten-free and dairy-free cookies are like rocks, or have a weird consistency, but these are so perfect. I couldn't stop myself from eating them.

These cookies were really yummy! I also added 1 tablespoon brown sugar plus 1 teaspoon vanilla extract. It was delicious. I told DH to hide it from me as it is addictive. Thanks for such an easy and good recipe.
