Bananas are my favorite fruit. I also love the sweetness of a daiquiri, so when I found this recipe (heaven only knows where), I thought they were wonderful! If you're not a Rum-Runner (FFF reference), feel free to sub in a few drops of rum extract to taste.

oh my god, what an exeptional recipe, so easy, I thought the long list of ingredients were daunting but not at all, I made it exactly as stated and was very dubious about no eggs, I have NEVER cooked any muffin or cake without an egg before and awesome, I am sitting eating it at the moment hot out of the oven, broke into two with a dob of butter, whipped cream and fresh homemade cherry sauce over it, to die for, what a winner of a recipe, go on try it, Thanks for a brilliant recipe.

Delicious! Never would have thought to make muffins with rhum - but it works! Added a bit more lime juice and I did add an egg because I didn't have self-rising flour. Added a few chocolate chips also. Baked it for about 30 minutes. Thanks Redneck for a yummy muffin recipe!
