I made this recipe for lunch today and it turned out great. The only problem I encountered was that I did not have an olive oil spray and substituted vegetable oil. This created a brown bottom which still ended up sticking. Next time I will have to make sure I either use more or use a spray. I wasn't sure what the difference was between whipped cottage cheese and normal. All the same I still used what I had and you could see little white specks but it tasted fine and I couldn't taste the cottage cheese. I filled my omelet with colby jack, a chopped pico de gallo mix (which had tomatoes, onions, peppers, and cilantro), salsa, and olives. This was a great recipe since we had just had tacos the other night and had all of these leftover toppings to use which was great. Thanks for the great recipe!

Great recipe!!! I made these for my family for breakfast one Sunday morning. I offered ham,spinach, mushrooms, onions, green peppers, cheddar cheese, salsa, parmesan cheese and jalapeno peppers. They thought this was great, everyone could add what they wanted. Easy and delicious, a cooks best combo...lol. Thank you for posting, Stephanie

After it was folded over, I was treated to a double delight. A lightly browned pancake shell, and a soft fluffy egg center. I filled mine with shredded cheese that melted into a smooth creamy core.

Absolutely delicioso! I stuffed mine with crisp bacon, sauteed onions and mushrooms, Colby Cheese, Monterey Jack Cheese, Swiss Cheese, and seasoned it with seasoned black pepper and paprika. Can't wait to try your "West Omelette" recipe1 (Just kidding, Bergy)
