Batter for Deep Frying

This batter is awesome for deep frying anything! Onion rings, mushrooms, zucchini spears, fish, chicken, shrimp, etc. It is light and thin so you can actually still taste the food you deep fried. This recipe doesn't seem like it would make a lot but it's so thin that it really covers a lot of food.

SERVES 6 -8 , 1 1/2 cups batter (change servings and units)

    In a mixing bowl, combine the flour, cornstarch, and baking powder, and salt.
  2. 2
    In a seperate mixing bowl, combine 1/2 cup plus 1 T. water, 1 T. beaten egg, and oil.
  3. 3
    Add wet ingredients to dry and combine until mixed.
  4. 4
    Follow your deep fryer instructions for whatever veggie or meat your frying.
  5. 5
    This batter is thin and delicious. Don't worry if it doesn't look like it's thick enough. It works great.

    This recipe was the best I have ever used.It didnt get my oil all dirty like most batters do.Light and airy texture.We didnt think it had enough salt but that is easily added.I made 4 batches to do a generous batch of onion rings and catfish nuggets,so make plenty to begin with.try this you will not be sorry!

    My husband and I both really liked this batter. I cut it in half and it got a little thick on me, but I just added a little water and it thinned down nicely. It fried up to a nice golden brown color and crisped up prefectly. Five stars all the way!

    Great with any meat or vegetable we have tried it with, and it doesn't trash your oil as some batters do. It is a great base to experiment with different spices depending on the fare. This will be used in our house for as long as I am doing the deep frying...
