Cheesy Salsa Rice

This is a quick and delicious side dish that I make all the time to serve with Mexican food. I know it's not authentic, but my family loves it!

Ingredients

  • cup long grain rice
  • cups water (or broth)
  • cup salsa (more or less to your taste)
  • cup shredded cheddar cheese (more or less to your taste)
  • salt and pepper
  • Directions

    1. 1
      Cook rice according to your preference. (I use a rice steamer.).
    2. 2
      When rice is done, quickly add salsa, cheese, and salt and pepper to taste. Mix well.
    3. 3
      Additional cheese may be sprinkled on top.
    4. 4
      Serve.

    I made some chicken enchiladas for dinner last night and we had this as a side dish. Really tasty rice dish and will make again. Thanks for sharing.

    We loved this with our mexican themed supper last night. I cooked the rice in 2 cups of vegetable broth. I also added a drained rinsed can of black beans and a drained can of chopped green chiles. I think we'll be having this as a regular part of any Mexican meals! Thanks.
