Tortellini Soup

Whip this one up on a weeknight for a fast, easy, and delicous soup!

SERVES 4 -5 (change servings and units)

Ingredients

Directions

    Saute celery, onion, carrots and garlic in oil.
  2. 2
    Add spinach and tomatoes and simmer 10 minutes.
  3. 3
    Add spices and chicken broth.
  4. 4
    Simmer, covered, until vegetables are tender-crisp.
  5. 5
    Add water and tortellini and simmer 10- 15 minutes.
  6. 6
    Remove bay leaf and serve.

This is a very refreshing, yet filling soup. I love the fresh herbs and vegetables. In addition to adding some salt, I used some leftover parmesan-reggiano rind to further flavor the broth. Thanks for a quick soup idea that the whole family can enjoy.

    This soup is wonderful! I had to use a few shakes of dry italian seasoning instead of the fresh herbs and I added some cooked chicken, but otherwise made it as written. This will definitely become a favorite dish for us. This would also be a wonderful base for many other soups if you feel like changing out the starches (ie rice for pasta). What a tasty, versatile soup. Thanks so much!

    This soup was easy and very good. I sprinkled imported parmesan cheese on top of each serving. I think this added another layer of flavor.

    This soup was really good my husband loved it. I made it for my grandmother and aunt after a long day of shopping and they thought it was wonderful. very very easy to make. Served it with salad and french bread. yum yum!!
