Mojito Mango Chicken

This was created for Ready, Set, Cook 2006. A mojito is a traditional Cuban cocktail made with rum, mint and lime. This dish incorporates the mojito into a mango salsa. Once you pour this Caribbean "cocktail" over your gingery, garlicky chicken, you have a highly flavorful Caribbean entree.

SERVES 4 (change servings and units)

Ingredients

Mango Salsa

Directions

    Preheat oven to 350 degrees.

    To make salsa, heat oil in a skillet over medium high heat.
  3. 3
    Add green pepper and onions and saute about 4 minutes.
  4. 4
    Add minced ginger and red pepper flakes, saute another 1 minute.

    Now add mango and cook an additional 5 minutes.

    Now add rum and lime juice and simmer for one minute.

    Take off the heat and stir in mint. Set mango salsa off to the side.

    For the chicken breast preparation pat the breasts dry.

    Combine the flour, garlic powder, ginger, salt and pepper.

    Lightly pat the chicken into the flour mixture.

    Heat the oil over medium high heat in an oven proof skillet.

    Lightly brown the chicken for about three minutes on each side.

    Pour the mango salsa over the chicken.

    Put the uncovered skillet in a 350 degree oven for 10 minutes.

mango salsa tasted even better than I expected-I can't imagine any improvementsto be made to that. Recipe was a fast one to prepare that did not taste like it was made quickly!

    I'm really sorry but this recipe just didnt work out very well for me. I followed the recipe and instructions as written. My onion burnt and the salsa didn't have a very appealing look, as it got very brown not resembling salsa much at all. The flavor was ok, but I think some jalapeno would have been a nice addition. The recipe also did not say when to add the sugar. I think the "salsa" ingredients would have been better if made more as a sauce, as I don't think cooking it the way it is gives it the appeal it could have. Cooking time wsa right on, my chicken came out tender and juicy. Not a difficult recipe to make either. I'm sorry this didn't work out for me so well, but wish you much luck in the contest!

    Great flavours! Quick and easy to prepare. I really enjoyed the mint (I used dried mint)in the salsa mixture, it would be even better with fresh leaves! I will definitely make this recipe again. Thank you Chef.
