These are truly world famous. I have made them for guests from England and the Netherlands as well as from Nova Scotia. I remember the first time I ever made them. I was a fairly newly wed when my husband asked me for pancakes.I very sweetly replied " I can't make pancakes ,I dont have any pancake mix" to which my husband answered "don't you have a cook book ??" Thus begun my obsession of cooking things from scratch.( I was 14 when I learned you could make a cake from scratch)

These are wonderful pancakes. Try 3/4 cup flour and 1/4 cup Cream of Wheat for a wonderful variation.

I made these this morning. They were the best pancakes I have ever made and so simple. The family loved them!

These disappeared pretty quickly. They're light, puffy, eggy, thin and more than a little crepe-like. They aren't as delicate as I normally expect crepes to be, which can be a good thing.
