Crock Pot Wild Mushroom Beef Stew

My husband recently discovered this flavor rich, thick, beef stew recipe, and was amazed at how easy it was for him to make. We decided it was definitely a repeat recipe, and wanted to post it here for future reference.

SERVES 6 -8 (change servings and units)

Ingredients

Directions

    In a small bowl, combine the flour, salt, pepper, and thyme.
  2. 2
    Place beef in a 5 qt crock pot. Sprinkle with the flour mixture, and toss to coat.
  3. 3
    In the same small bowl used to mix the flour (now empty), combine the beef broth, tomato paste, wine and garlic. Mix well and add it to the beef in the crock pot.

    Add the potatoes, mushrooms and carrots to the crock pot and mix well to disperse the ingredients evenly throughout.

    Cover and cook on HIGH 5 - 6 hours, or LOW for 8 - 9 hours, until vegetables and beef are tender.

    DO NOT LIFT LID AND STIR DURING COOKING TIME.

    When ready to serve, stir well, and garnish with fresh chopped parsley.

I love that this was so easy to prepare and it was wonderful to come home to a ready meal. The only complaint that I received from the family was that it had just a bit too much thyme flavor. When I make this again, I'll drastically cut down the amount that I use.

    The aroma while this is cooking is amazing. I was not as thrilled with the taste although I can't put my finger on what it was. My husband enjoyed it more than I did. It does cook up beautifully with a thickened gravy. We both felt there could be a bit more gravy. The vegetables were done perfectly after 5 hours on high and the meat was tender. Thanks for sharing your recipe.

    This one received RAVE reviews when I cooked it. Perfect for this busy holiday season! I used Freida's dried mushrooms in a combination of Morel, Padi Straw, Wood Ear and Shiitake, but next time I'll just use regular button mushrooms, and increase the thyme to 1 tsp. The meat was incredibly tender, but the veggies still had some body, and didn't completely turn to mush. A recipe to keep & repeat!

    Thanks for the terrific recipe. I mixed some pork with the beef, but otherwise followed the recipe exactly. It was so delicious, and it smelled so good cooking that my dog begged by the crockpot all day! My friend brought fresh Italian bread and desert, and we had a terrific meal. I will definitely make this again. Kat
