Easy Vegetable Rice Medley

This recipe is from "Kraft: Food and Family", WInter 2006. Excellent dish!

SERVES 4 (change servings and units)

Ingredients

    Heat oil in a skillet.
  2. 2
    Add onion, carrot, celery, and red pepper; cook 5 minutes or until tender.

    Add broth; bring to a boil.
  4. 4
    Stir in rice and peas; cover.
  5. 5
    Simmer 5 minutes.
  6. 6
    Remove from heat.
  7. 7
    Let stand 5 minutes before serving.

    ****To save time, replace all the veggies with 3 cups frozen mixed vegetables or frozen broccoli florets and add them when you would have added the peas.

    This was an easy side dish. I didn't have Minute rice, so I used regular white rice and precooked it; turned out fine! Thanks for sharing.

    This is an easy, colorful, low-fat side dish. I made it just as written, except I had no red pepper, so I added an extra carrot. Thanx for sharing. I'll make it again.
