Broccoli With Red Pepper Sauce

A different way to serve broccoli and good, too.

Ingredients

  • lb broccoli floret
  • 1-2 tablespoon olive oil
  • 1 garlic clove, minced
  • 2 red bell pepper, seeded and coarsely chopped
  • small onion, chopped
  • 1/2-3/4 cup low sodium chicken broth or low sodium chicken broth
  • teaspoon tarragon or 1tablespoon fresh tarragon, chopped
  • teaspoon prepared horseradish
  • Directions

      Place broccoli in a steamer basket over boiling water.
    2. 2
      Cover saucepan and steam 7 mins, or until almost tender.
    3. 3
      Heat oil in a heavy nonstick skillet over medium heat.
    4. 4
      Saute garlic, onion and bell pepper 3-5 mins or until softened.

      Stir in remaining ingredients and salt and freshly ground black pepper and cook until mixture begins to simmer.

      Transfer mixture to a food processor or blender and puree until smooth.

      Taste for seasonings, again.

      Serve sauce over broccoli.
