Blueberry Bundt Cake

This cake can be make all year round since it uses frozen blueberries.

SERVES 12 (change servings and units)

Ingredients

    Preheat oven to 350°F
  2. 2
    Butter and flour bundt pan making sure to get all the nooks and crannies.
  3. 3
    Whisk flour, baking powder, and salt in medium bowl.
  4. 4
    Using electric mixer, beat 1 2/3 cups sugar and butter in large bowl until light and fluffy.

    Beat in eggs, one at a time.
  6. 6
    Beat in orange peel and vanilla.
  7. 7
    Beat in dry ingredients in 3 additions alternately with buttermilk.
  8. 8
    Fold in blueberries.
  9. 9
    Pour batter into prepared pan. Bake for 1 hour or until toothpick instered in center of cake comes out clean.

    Cool cake in pan on rack 10 minutes.

    Turn cake out onto rack and cool completely.

    Transfer cake to plate, sift powdered sugar over, and serve.

This cake is amazing! I made only one change to this recipe. I used fresh blueberries instead of frozen. And I can tell you I will be making this cake again. I followed the instructions perfectly, even to baking the cake for exactly 1 hour. Thank-you Lvs2cook for a keeper. I would recommend this cake to anyone!!

    Nice, moist cake with a great texture! Loved the added orange zest in it. We are bit of sweet tooths and I would increase the sugar to 2 cups or use an icing, but that is just personal preference.
