Crispy Oven-Fried Cod Fish

There is nothing fancy about this but if your looking for a crispy coating without any deep-frying this is about as good as it gets, If your frypan is not large enough to hold all of the fish, then transfer to a baking sheet that has been coated with oil, only dry breadcrumbs or the coating will not adhere to the fish --- cooking time is for oven only, if desired any large fish fillet can be replaced for the cod.

    Set oven to 475 degrees (set oven rack to second-lowest position).

    In a large heavy ziploc plasic bag combine bread crumbs, cornmeal, seasoning salt, lemon pepper, cayenne and garlic powder (if using) shake the bag to mix.

    In a shallow bowl slightly beat the eggs.
  4. 4
    Adding one piece of fish at a time to the bag, coat well with the mixture, then remove and dip the fish in the eggs, then return to the bag to coat the fish again, repeat for all of the cod pieces; transfer to a plate.

    Heat about 3 tablespoons oil in a large 12-inch ovenproof skillet (preferably cast-iron) over high heat until hot but not smoking.

    Fry the fish until the undersides are golden brown (about 1 minute).

    Turn over and add in another 3-4 tablespoons oil; cook another 1 minute more.

    Place the skillet in the oven and bake for about 5-6 minutes or until JUST cooked through.

    I love this!! I had some Blue Hake in the freezer that I wanted to use up-not our favorite fish but can't see it going to waste. I needed something to liven it up a bit-it is a really mild fish. I was a bit worried about the cayenne, not for me, but my husband doesn't like spicy food. This was just perfect. I cut it down to serve 2 (love that feature!!) and followed the recipe to the letter. I couldn't use the oven to finish it up so I just fried it. Soooo good, and so simple. Thanks Kittencal for another great recipe. You know that it will be good if it has your name on it!!

    Great easy recipe - I didn't fry the fish first I just baked it and it was wonderful & crisp outside and moist inside, served with tartar sauce, green beans, baby carrots & boiled potatoes Thanks Kittencal another of your winner recipes

    I have had some cod fillets in my freezer for a while now and since we've been trying to eat more fish, I decided it was the time to try out this recipe. We will definitely be eating more cod now... this produced a rally tasty and tender piece of fish. The amount of breading seemed a little much, but it was perfect when you double dip each fillet. The only thing I did different was to omit the pan frying entirely. I just sprayed a pan with some olive oil and set the fillets in a pre heated 400F oven for about 12 minutes... I also sprayed the tops of the fillets with olive oil and they turned out so crispy. My BF thought I had actually deep fried them... LOL Thanks for a great and easy fish recipe... we will be making this often!
