Caribbean Rice in a Rice Cooker

This side or a vegetarian main is loaded with flavor and texture. I made this in a rice cooker if you Add more water will increase the cooking time and produce softer rice; reducing the amount of water will produce firmer rice. But once you've found the ratio that's right for you, it'll be very easy to have perfect rice your way. Yes you can make stove top as well. Be sure not to remove the lid till done cooking.

Ingredients

  • cup white rice, rinsed
  • teaspoon ground jamaican jerk spice
  • 1/4 cup cilantro or parsley
  • sprig thyme, stem discarded
  • 1 garlic clove, minced
  • teaspoon grated fresh ginger
  • 2 scallion, sliced
  • 3/4 cup finely diced sweet potato
  • 1/3 cup toasted coconut
  • 1/3 cup raisins
  • 1/3 cup diced red pepper
  • cup chicken broth or vegetable broth, to cover rice
  • Garnish

    Directions

    1. 1
      Put aside 1 tablespoon scallions and 1 teaspoon coconut for garnish.

      Place all the rest ingredients in rice cooker. Pour broth 3/4 inch above the level of the rice.

      Press the cook button.

      When done fluff with fork place in a serving dish and top with reserved coconut and scallions place lime along side for garnish and use as wanted.

    This was pretty good. It did have a little bit of a blandness, but that might just be a personal thing. We will make it again, but next time, maybe use some pineapple juice and buillion instead of chicken broth. Thanks!

    Well Ms Rita - you've done it again. This is an amazing recipe!! I was worried about how the many flavors would work together...shoulda known better!! It was sooooo good I couldn't stop eating it! It had just the right amount of heat, spice and sweet. Loved it! Thanks for a great dish - yum!! acerast

    We had this tonight; made on the stove. Forgot to add the chicken broth, used water and it was plain tasting. However, salt and pepper brought up the flavour. Cilantro and scallions were added at the end. Thanks!
