Paula Deen's Molten Lava Cake

I found this in Paula's New Magazine. I haven't tried it yet, but I felt it would be great for a Valentine's dinner. Paula says this cake is great alone, but it can be topped with vanilla ice cream or a raspberry sauce. The recipe can be made ahead and refrigerated for 2 to 3 days.

Ingredients

  • 6 (1 ounce)  bittersweet chocolate squares
  • 2 (1 ounce)  semi-sweet chocolate baking squares
  • 10 tablespoons butter
  • 1/2 cup all-purpose flour
  • 1 1/2 cups confectioners' sugar
  • large egg
  • 3 egg yolk
  • teaspoon vanilla extract
  • tablespoons Grand Marnier
  • Directions

    1. 1
      Preheat oven to 425°F Grease 6 (6-ounce) custard cups.
    2. 2
      Melt chocolates and butter in the microwave or in a double boiler. Add flour and sugar to chocolate mixture. Stir in eggs until smooth. Stir in vanilla and Grand Marnier. Divide batter evenly among custard cups.

      Bake for 14 minutes. Edges should be firm but the center will be runny. Run a knife around the edge to loosen and invert onto dessert plate.

      Top with vanilla ice cream or raspberry sauce. (Topping optional).

    This was wonderful. I did however have to cook it for a little bit longer because the first one I flipped over just oozed all over the place. So I just shut off the stove and let it sit there for an additional 3 minutes and then it was fine. Served it w/ vanilla ice cream.

    These were great, not too sweet, a perfect serving size and they had a wonderful texture between the slightly crunchy top and soft middle. I left mine in the oven a little longer because they didn't look cooked enough, that turned out to be a mistake because the inside didn't turn out quite runny enough, so next time 14 minutes will do. As well, I made them ahead and left them in the fridge for a few hours and then brought them to room temperature before baking. That worked out fine. I would probably even make them a day ahead and see how it works. I will definately make these again.
