Great panini. I used sourdough bread (my favorite). The mayo-herb spread is what makes all the difference in this sandwich, don't be tempted to leave it out or skimp on it.

This was the recipe I chose to 'baptize' the new panini grill I'd been pining for. Rather than measuring carefully, I just dumped 3 or 4 T. mayo, a heaping tsp. of dijon, a little Italian parsley and 2 big basil leaves in a mini- processor and twirled it a few times. (That was more than enough spread for 2 extra-large sandwiches.) I used smoked turkey, bacon and Swiss, and brushed the bread with olive oil. The only way I really deviated from the recipe was by adding about a tsp. of hot pepper relish to each serving for a little kick. My son took one bite, muttered, "Killer! Absolutely killer!" — and then didn't come up for air again until he'd devoured every crumb. Can't wait wntil tomatoes are in season. That will add yet another layer of yumminess. Thank you so much, Pets! You definitely helped confirm the fact that I needed that panini.

Wow wow wow! These were so yummy!!! We used fresh chives and sourdough bread and also used mayo on the outside of the bread instead of the olive oil and these were delicious! So easy to make and they tasted so much better than any "chain" sandwich shop! Thanks for posting this great recipe! We will be making these alot!
