Cranberry Sweet and Sour Chicken

Quick and easy meal when your in a hurry. I know the idea of cranberries and BBQ sauce together does not sound very good but these 2 flavors really do compliment each other in this recipe. I have also used pork when making this dish.

SERVES 6 (change servings and units)

Ingredients

Directions

    Combine pineapple liquid and cornstarch.
  2. 2
    Stir in sauces and set aside.
  3. 3
    Heat oil in a large fry pan over high heat.
  4. 4
    Add chicken, salt, and pepper.
  5. 5
    Stir-fry until no longer pink.
  6. 6
    Add peppers and pineapple tidbits.
  7. 7
    stir fry 2 minutes longer.
  8. 8
    Stir the cornstarch mixture and add to chicken.
  9. 9
    Cook and stir constantly, over med heat until thickened.
  10. 10
    Server over rice or chow mien noodles.

    This recipe does have an incredible taste. It took a while to make it though 2lbs is a lot of chicken to cut up.

    Delicious!! I made it for the second time tonight due a request from hubby. We both love it and the recipe makes enough for hubby to re-heat the next day for lunch. Very tasty and a real nice change from your regular sweet and sour. Thanks for the keeper.

    Actually didn't care much for the way this turned out. Surprisingly, considering the ingredients, I thought it tasted quite bland. While simple, I probably won't make this again.
