Baked Eggs in Bacon Wraps

Bacon wrapped in each muffin cup around the sides,with an egg in each cup. When there were 8 to 10 around the kitchen table in the morning, it was an easy breakfast to prepare and bake. Serve with toast and fruit. I used to make 18 to 24 servings so that each person could have two if desired. I worked a full time job and made recipes that were quick, easy, good tasting and that allowed all of us to get to school and work on time. Now I would use turkey bacon. When I first created this recipe, turkey bacon was not available.

SERVES 6 , 2 wraps per person (change servings and units)

    Preheat oven 375 degrees.

    In medium frying pan fry bacon to soft transparent stage.
  3. 3
    Drain on paper towels.
  4. 4
    Line each slice around the side of each muffin cup. Ends may overlap.
  5. 5
    Break egg directly in the center of each muffin cup. 12 cup muffin pan.
  6. 6
    Slightly salt and pepper.
  7. 7
    Cook 15 to 20 minutes.

    Watch for whites and yolks to begin to set.
  9. 9
    Take out with small spatula on a serving plate.
  10. 10
    Serve with fork and knife.

    If you want the tops to be basted,after ten minutes of cooking, baste each egg once with 1/2 teaspoon of water.

    You can fry bacon the night before and drain and refrigerate for morning.

I was a bit skeptical about these, but they were delish. They came out just fine, but for my oven, I'll need to tweek it a bit. My family likes their bacon pretty done, so depending on how thick it is, you may need to cook it a little longer. I think we will scramble the eggs with some cheese and chives next time. This time we topped them with a bit of gouda/pepper cheese and that was great. This will be fun for serving large crowds an elegant looking meal. Thanks for a fun recipe.

    Wow! I always wanted this recipe. My mom used to make them for us when I was little! Oh wait.....you are my Mom! Hee Hee. I pre-cooked my bacon in the microwave instead in the frying pan. Another shortcut is to use the Oscar Meyer Ready to Serve Bacon.

    I love this recipe! I partially cooked the bacon in the microwave, proceeded with the recipe. Took them out of the oven, topped them with cheddar cheese and put them back in the over for a few minutes just to melt. AWESOME! Plus, they look great on a plate with hash browns, grits and biscuits!!!
