Kielbasa Potatoes, Onions & Carrots

This hearty one dish meal consists of kielbasa, potatoes, onions & carrots that is baked in beer till tender soft. Flavored with garlic, Worcestershire sauce, horseradish, peppercorns and bay leaf. I used a mixture of sweet potatoes and white potatoes use what you prefer.

Ingredients

  • 1 ring kielbasa, sliced
  • large potato, peeled and cut into 1-inch cubes
  • large onion, peeled and quartered
  • 3 carrot, peeled and sliced
  • 6 garlic clove, peeled and lightly smashed
  • cup beer
  • tablespoon grated horseradish
  • 5 peppercorn
  • 1 bay leaf
  • tablespoon worcestershire sauce
  • salt
  • Directions

    1. 1
      Preheat oven to 350°F.
    2. 2
      In a large hot Dutch oven fry kielbasa just to release some fat.
    3. 3
      Toss in potatoes, carrots, onions, and garlic.
    4. 4
      Mix together the beer, horseradish, peppercorns, bay leaf, and Worcestershire sauce. Pour over the kielbasa mixture.

      Cover and bake for 60 minutes then toss.

      Raise oven temperature to 425°F; sprinkle with a pinch of coarse salt and bake for 20-30 more minutes till top is crisp and inside is fork tender.

      Serve with fresh rye bread, horseradish and or mustard.

    The flavors meld so well together. I did add some cabbage to this because I love cabbage and sausage so much it turned out great.

    My first attempt doing this recipe in the oven didn't work so well. Yesterday I made it in the crockpot (cooked about 10 hours on low) and had to come back and change my review to 5 Stars. I loved it with a mix of white and sweet potatoes!

    This was really good. I made it in the crockpot with low fat kielbasa - cooked on high for about 4 1/2 hours.

    This is a great all in one meal that's full of flavor and so comforting. I used all white potatoes, chopped the onion, and minced the garlic. Even my husband who doesn't care for kielbasa ate a big, full plate! I am looking forward to leftovers.Rita this one is a keeper! Thank you.
