15 Minute Shrimp Scampi

Truly delicious seafood/pasta dish that is nearly impossible to mess up & a great stand by for rushed dinners.

SERVES 4 -6 (change servings and units)

Ingredients

    start salted water boiling for pasta.
  2. 2
    heat olive oil.
  3. 3
    saute garlic& onions over high heat till onions start to turn clear.
  4. 4
    add wine, turn to medium heat& reduce for 5 minutes (alcohol smell will be gone) add shrimp till warmed through (start to curl up).

    stir in butter till melted.
  6. 6
    turn heat to lo/warm.
  7. 7
    salt& pepper to taste.
  8. 8
    cover till pasta is ready (2-3 minutes for angel hair to cook).

    serve together.

    This was so delicious! I cut way back on the butter and oil, but kept the wine (Chardoney) at 1 cup I also reduced the onion and garlic amount (personal preference). I added a shake of Old Bay Seasoning during the cooking. I served this over brown rice and topped with a little parsley and fresh grated parmesean cheese. Next time, I may add a splash of lemon juice to the wine. I will definately make this again! So quick and easy! Thanks for sharing!

    I liked it a lot but would use the full amount of oil next time because I like the pasta to have the "sauce." I added red pepper flakes and some Italian spices. I wouldn't hesitate to add extra garlic too. Next time, I'll use a different pasta though, like a thin spaghetti. Angel hair cooks so fast that I may have overcooked it and a regular spaghetti would have cooked while the shrimp was cooking without adding extra time. I did add a tad amount of Seasoned breadcrumbs to the mix which was nice. Thanks for a very good recipe!

    YUM! I was looking for a recipe for Shrimp Scampi and found this one...I followed the recipe pretty closely except I used more garlic, added some parsley for extra color, used margarine since I didn't have butter on hand and instead of white wine, I used apple juice with a splash of vinegar. The addition of apple juice and vinegar made it a bit sweeter than usual scampi...But, everyone had seconds and only one serving makes up any leftovers! Thanks Ann B for a delicious recipe that my whole family enjoyed and will enjoy again in the future!
