Lemony Salmon

This was put together by me and my mother. My Family has fish once a week, and my mother used to just make it plain. Since I like sprucing up things, we decided to put a simple (and I mean really simple) recipe together. If you have a convection oven or an oven that includes convection cooking (like mine does, and it also allows for baking and custom broil), than try this simple recipe.

SERVES 5 (change servings and units)

Ingredients

Directions

  1. 1
Line a baking sheet with tin foil, and rest the fish on top of the tin foil.
  2. 2
Drizzle the lemon onto the fish.
  3. 3
Season with parsley, salt and pepper.
  4. 4
Put in a preheated 350° F oven (I used the convection method, but if your oven does not have that option, then just bake). Cook it for 30 minutes or until done.

5 Stars ! DH said that this was the best tasting salmon that we have had in a long time. Simplicity is the key, this oozed flavour and was very tasty indeed.... just the fish and just the lomon and a hint of the parsley. Please see my rating system: 5 excellent stars for bringing out the best in a simple salmon fillet. So easy too... well done and Thanks!

This is a wonderful way to prepare salmon. I used fresh squeezed lemon juice, fresh parsely and a lemon pepper blend which I sprinkled over the salmon. I lined the pan with foil and clean-up was a breeze. I too cooked this on convenction bake. Served it with fresh lemon wedges, "Copy Cat" Green Giant Niblets Corn in Butter Sauce and a green salad for an easy but delicious meal.

I liked this because the lemon juice and parsley accents the salmon flavor, without covering it up. Plus, there's no added fat! I used a little sugar in place of salt. Sometimes simple is best and this is one of those times. I'll fix my salmon fillets this way again. Thanx!
