Green Bean Bundles (Paula Deen)

This recipe is from Paula Deen's show on Food TV. It looked like the perfect thing for Christmas dinner. It worked out great because I was able to blanch and bundle them and have them all ready to pop in the oven in advance. They looked as yummy as they were. Highly recommended!

Ingredients

  • lb fresh green beans
  • olive oil
  • salt and pepper
  • bacon
  • Directions

    1. 1
      Preheat oven to 350°F.
    2. 2
      Blanch green beans for 3 minutes. Toss them in olive oil and salt and pepper. Bundle about 5 green beans and wrap a piece of bacon around the bundle. Place in a roasting pan and roast for 10 to 15 minutes, until bacon is cooked.

    These are absolutly delicious. Used turkey bacon instead of pork bacon to save on the fat calories. I also did them on the grill as a sidedish to some rosemary/garlic/lemon grilled chicken. Easy and delicious!

    I haven't cooked these myself yet, but had them at Chrismas at a gathering. They were AWESOME! Can't wait to try to cook them myself!

    This is so good! Perfect side dish for entertaining. Simple, easy to make ahead, looks pretty, and so yummy. Everyone raved about the smoky bacon-infused flavor of the green beans.

    What can I say, these little bundles are awesome! I make them all the time for large family gatherings because I get so many requests for them. My cousin even asked me to make them for her wedding reception dinner.
