Leftover Turkey Casserole

You could use chicken, ham or beef -whatever you have left over. If you have it, use your favorite stuffing recipe, enough to top the casserole

SERVES 4 (change servings and units)

    Heat oven to 350 degrees F.

    In a 9 x 13-inch pan or large oven-safe casserole dish (or whichever size is appropriate if you don't have as many leftovers), spread the mashed potatoes in the bottom of the pan, layer meat and vegetables over the potatoes.
  3. 3
    Spread gravy over the top, and then top with leftover stuffing. If you don't have stuffing leftover, or don't care for it, you can put the mashed potatoes on top of the casserole to make a crust.

    Bake for approximately 30 minutes or until hot.

We had this last night. I also layered it differently, stuffing on bottom, turkey, creamed corn, threw in some French's onions, then the mashed potatoes, more onions and topped with shredded cheese. Very tasty! A definite keeper!

    My husband gobbled this up!! I won't even say how many servings he had, but he loved it as we all did. I also put the potatos on the bottom, turkey, frozen corn and then gravy over it all. Since I had no stuffing left, I used a pastry shell and fitted it over it and it was great! I did have to switch the oven to broil for a few minutes to cook the pastry better, but I would definately do that again. This is a keeper - thanks!

    Delicious! I made it pretty much as you directed, only I seasoned each layer with a bit of s&p, put a 2nd layer of mashed potatoes over the stuffing, & sprinkled a bit of shredded cheddar and chives on top before baking.

    This was perfect! I used up all my left overs and we enjoyed every bite. I had some very thick leftover baked potato soup that I added as well. Thank you for sharing this recipe!! I will use this one again!!
